I’ve just returned from an eye-opening culinary and cultural tour of China, and let me tell you – the flavors I experienced have truly left an indelible mark. Apparently, these crabs have the remarkable ability to harvest themselves, swimming up to the edge of the water and crawling onto land when they’re ready to be eaten. It’s a testament to the deep connection between the land, the water, and the food that sustains the people of this region.

As we continued our culinary journey, the next stop was the historic city of Xi’an, renowned as the dumpling capital of China. Here, we witnessed the art of dumpling making, marveling at the sheer variety and quality of these pocket-sized delicacies. From savory fillings like pork, chicken, and seafood to sweet renditions featuring walnuts, peanuts, and even turnips, the dumplings were a revelation.

These delicate parcels, bursting with flavorful broth and succulent fillings, captivated our senses. From the traditional pork variety to the indulgent crab and even the exotic chicken and truffle rendition, these dumplings exemplified the creativity and innovation that has come to define Shanghai’s culinary landscape.
